Dubbybear’s Raspberry Tuna Salad With Dijon And Balsamic Vinegar Dressing
Conveniently serves 2-4
Ingredients:
1 cup grated or sliced carrots
1 cup of sliced button mushrooms
1 cup of sliced radish
1 cup of fresh raspberries
a handful proportions of garlic croutons (we bought it in fairway market, or you can make your own
if you have a spare time =D )
mixed greens or romaine lettuce or whatever floats your boat
1 small can of white Tuna albacore in water
1 cup of grated mixed cheeses (preferably monterey jack and Mild Cheddar cheese mix)

ERIC’s Homemade Dijon Mustard-balsamic vinegar Dressing
1 tbsps of Dijon mustard
2 tbsps of balsamic vinegar
3/4 cup of vegetable oil (the mustard is so strong tasting it’s not really worth using olive oil)
1-2 Garlic clove(s) according to taste
salt and pepper
at least 4 branches of fresh thyme
Procedures:
1) Clean and prep the vegies: carrots, radish, mushrooms…once done set aside.
2) Prep the ingredients for the Dijon and Balsamic vinaigrette. In a jar or deep bowl (for us its easier to use a recycled jar from a mango nectar product, yeah helps the environment too! =D) add all ingredients mentioned, shake if its in a jar..whisk if its in a deep bowl.
3) Set the plates according to your style, put the vegies first and all the salad ingredients and slowly drizzle the Dijon-Balsamic vinaigrette over the mixed salad.
4) voila! easy and very simple yet soooo satisfyingly GOOD.
